Fancy a Chinese? It’s quick and easy to make Mayflower curry sauce in the microwave – even adding in onions and peas, just like in a Chinese takeaway dinner! This curry sauce recipe uses just 4 ingredients and takes under 10 minutes and it probably tastes just like your local takeaway at a fraction of the cost!

The back of the box gives you the official, basic, microwave curry sauce recipe, which is to whisk 85g of the curry mix powder (about 1/3rd of the box) into 340ml of cold water in a microwave safe/casserole dish and then to microwave it for five minutes, stirring every minute.

But what about adding the onions?

You will need to part-cook the onions before adding them to the sauce, just so they’re not “too raw and crunchy”. Here’s the recipe:

Chinese Curry Sauce With Onions & Peas

You will need:

  • 85g Mayflower curry sauce (1/3rd of the pack)
  • 340ml cold water
  • 1 small/medium onion
  • A handful of frozen peas

Method

  • Chop/slice your onions, place them in a microwave safe/Pyrex dish, then spray with oil.
  • Microwave the onions on high power, turning them every minute until they’re just softening; this should take 4-5 minutes, depending on quantity and your bowl shape.
  • Mix up the Mayflower curry sauce, with cold water, whisking (you can use a fork!) until the curry sauce is smooth. Microwave for 3 minutes, stirring every minute.
  • Check the thickness of the sauce, you might wish to add a little more water if it’s too thick for your tastes.
  • Add the part-cooked/microwaved onions to the sauce and add the peas. Give it a stir.

  • Microwave the curry sauce with onions and peas for two minutes, stirring every minute and checking the thickness of the sauce. Want it thinner? Add more water; want it thicker? Add a little more curry sauce powder
