What is Mayflower Curry Sauce?

When I’m asked how I make my Chinese curry sauce I always say “I make Mayflower curry”, using the powder to make the curry sauce. I’m then usually asked what is Mayflower curry sauce?

I first tried Mayflower products a couple of decades ago, when I found their frozen curry and frozen egg fried rice in a shop freezer range. So the brand was on my radar when I spotted the curry sauce packet in a shop and just started buying it by default. I didn’t expect it to be as good as it turned out to be – and have never been without it since!

There are two varieties: Medium Curry and Hot Curry. I love my curry hot, but I prefer to buy the medium curry variety as it gives a more authentic Chinese takeaway curry sauce taste in my opinion.

Inside the box there’s a resealable plastic takeaway box, so you can spoon out as much, or as little, as you wish. Some days I just use 1-2 teaspoons to make a little amount of curry sauce and other days I’ll use 1/3rd or half the pack to make a good sized portion of Chinese curry sauce.

How Long Does Mayflower Curry Powder Last?

If you store it properly, in a dark cupboard (I keep it in the original box, in the wall cupboard in the kitchen), then this curry powder will be good for at least three years. After that time it might just become less hot, it’ll still be safe to cook with and eat.

How Do You Use Mayflower Curry Sauce?

You might notice from the photo that the curry powder seems quite clumpy and lumpy – that’s just because it’s been sitting in the box for awhile. Once out of the box I’ll just use a fork or the back of the spoon to break it down, or yo can whisk it once you’ve added water.

This is an easy to use curry sauce that cooks up wonderfully; it’s simple and just works:

  • Add 2-3 teaspoons of curry powder to some boiling water and use a fork or a whisk to mix it together.
  • Add more water to make the sauce thinner, or more powder to make it thicker.

Mayflower Sauce Recipes

On the back of the box they do give you some simple recipes. The box weight is 255 grams.

The recipes suggest:

  • Saucepan Method, serves 2-3: Whisk 85g of Mayflower curry sauce mix into 340ml of cold water in a saucepan. Bring to the boil stirring continuously. Simmer for 2 minutes. Serve.
  • Microwave Method, serves 2-3: Whisk 85g of Mayflower curry sauce mix into 340ml of cold water in a microwave safe casserole dish. Microwave for 5 minutes, stirring every minute.

All the recipes are fully adjustable though – and you can make your curry sauce thinner by adding more water, or using less powder.

Chicken Curry Recipe From the Back of the Box:

There’s a simple chicken curry recipe on the back of the box:

  • 170g diced chicken or one large chicken breast; 55g diced onion or one small onion; 55g or half a cup of garden peas; 85g, approx 1/3rd of the box, Mayflower curry mix; 1 dessertspoon of vegetable oil; 460ml cold water.

Heat the oil in a frying pan or wok. Stir fry the chicken for three minutes. Add the onion and peas and stir fry for another minute. Remove from the pan and keep warm. Add water to the wok/pan. Stir in the curry mix, whisk until the sauce comes to the boil. Add the chicken, onion and peas to the curry sauce. Lower the heat and simmer for 2 minutes, stirring occasionally. Serve.

Can you Use Mayflower Curry in a Slow Cooker?

Yes, I do this all the time. Just add your ingredients to the slow cooker, then make up the curry mix and water and pour it in. I’d put it on high for 1 hour until I saw the sauce bubbling/moving, then turn it down to low for 3-4 hours.
