One Pot Microwave Dinners: Thai Rice

A favourite one pot microwave dinner for me is thai rice.  This is a real food cheat’s meal – it’s fast, it’s hot, it’s tasty. Typically I’ll use this ‘recipe’ to use up leftover rice – usually when I cook rice, which is done in a microwave steamer, I’ll cook two portions and the second portion is immediately cooled, boxed and put into the fridge.  In the past I’ve also used pouches of microwave rice, just for speed – although, as a rule, I dislike the taste/texture of microwave pouches of rice, preferring to just steam my own.

You can cook this as a side dish, but I just ate it for my Sunday lunch 🙂

Method:

  1. If you’re using a pouch of rice, then open it and tip the rice into a microwave-safe container.  I always use my microwave noodle bowls for this.
  2. Add the frozen Quorn thai curry to the rice.
  3. Microwave on full for 5 minutes.
  4. Stir.
  5. Microwave on full for 2 minutes.

Serve.

That’s it.  Of course, you can add in any other veggies you’ve got, or even add in half a teaspoon of thai green curry paste and a splash of milk (to make more ‘sauce’).

This is one of several ways I make a similar dish, I had a bag of the frozen Quorn Thai Green Curry in the freezer that I need to get through, so that’s why (today) I’ve used this food cheat dinner method!  After all, this website’s about getting tasty food onto the plate soonest, not about the best recipe for thai rice in a microwave!

I’ll eat this as a main meal/snack meal – it’s hot, filling, delicious – which is what food should be!  There’s even some of that 5-a-day stuff in there as there are vegetables (mange tout, brocolli and more) in the packet.

Thai Rice is great as an Easy Work Lunches solution as you can use the pouches of rice and store them safely in your drawer at work, then take the frozen Quorn Thai Green Curry in your microwave cooking pot.  Just add the rice to the pot at lunchtime and microwave!  The Sistema Microwave Noodle Bowls are perfect for this – I’ve used mine today to make this for lunch, my bowls are red, which you can see in the photo.
