Leftover Turkey Stuffing Cranberry Sauce Roll

With leftover turkey still lurking in the fridge, this turkey, stuffing and cranberry sauce roll was quick to pull together and a tasty way to use up those Christmas leftovers!  I’d usually eat this as a turkey & stuffing sandwich, but I happened to have bread rolls in the house and no bread whatsoever!  Eat it at home, take it as a packed lunch for work, or take it out with you as a Walking Snack on a healthy long walk!  This leftover turkey roll didn’t get further than my sofa 🙂

I try to use up leftovers “as they are” without needing to add a whole new raft of ingredients … as I find that is often the route to ending up with MORE leftovers than you started with!

Ingredients: 

  • One bread roll
  • Leftover turkey
  • Leftover stuffing
  • Cranberry sauce

Method: 

  1. Slice your bread roll and place the cold turkey on the bottom half (you can butter that if you wish, or not).
  2. Place some stuffing on top of the turkey and spread cranberry sauce on the top half of the bread roll.

  3. Put the top of the roll, with the cranberry sauce, on top of the bottom half that has the turkey and stuffing.
  4. Eat!

I love these big bread rolls, I keep them in the freezer and they defrost in the microwave in about 30 seconds (wrap in kitchen paper, microwave 15 seconds, turn, microwave 15 seconds).

Before I freeze bread rolls though, I slice them to make it easier to use them once quickly defrosted as it’s easier to cut the bread rolls before you freeze them than after when they’re warm from the microwave.
