Giant Yorkshire Pudding, Sausage Casserole Filling

A giant Yorkshire pudding, filled with sausage casserole and mashed potatoes is a great winter warmer! I’d bought a pack of eight Lincolnshire sausages from Aldi and wanted to use up a sausage casserole mix pack I’d bought from Asda a couple of months ago. Years ago we used to have the Coleman’s Sausage Casserole Mix at home, so I had decided to try 2-3 different sausage casserole mixes to find out which one I liked best.

Using a sausage casserole mix is a way to very quickly and easily produce food that tastes great, without having to source/buy a ton of ingredients.

I made the sausage casserole in my slow cooker. I then made a giant Yorkshire pudding in my mini oven and spooned the sausage casserole in. I’ve served this with mashed potato, that I’d made in the microwave and frozen peas cooked in the microwave oven.

Ingredients for Slow Cooker Sausage Casserole:

  • One pack of Aldi Lincolnshire sausages, 454g. Skins removed and each sausage divided into three pieces then rolled into sausagemeat balls.
  • 3-4 carrots, peeled and chopped into small chunks
  • 1 medium onion, sliced/chopped
  • 1 pack of sausage casserole mix, today I used the Asda casserole mix, but you can use any
  • ½ tin of baked beans (~225g).
  • Half a mug of water, to get it going – I can always add a little later if I want more sauce, or thinner sauce.

Method:

  1. Place all the items into a slow cooker.
  2. Cook on high for about 1 hour, until you can see it’s bubbling.
  3. Turn the slow cooker down to low and cook for 4-5 hours.

The peas I defrosted with boiling water in a mug, then microwave re-heated for about a minute or so.

I used my usual Yorkshire pudding recipe. A good sized dish to cook a giant Yorkshire pudding in is a 7″ Victoria sponge tin as it produces a giant Yorkshire that’s the right size. I use this tin because I already have it – and – because a Yorkshire pudding made in this fits into my serving bowl a treat 🙂 and it only cost £1 as this sponge tin came from Poundland.

A Yorkshire pudding cooks in about 20 minutes in my mini oven.

I made the mash early and boxed it up and put it in the fridge. I made this by steaming sliced potatoes in the microwave oven. As I’d already cooked the mash, it just needed to be microwaved hot again (2-3 minutes) when I wanted to serve it.

To serve I put my baked Yorkshire pudding into my serving bowl, spooned out some of the sausage casserole and added some mashed potato and peas where they’d fit.
