Orange Marmalade Sponge Pudding

Serves 1-3, depening on your mood! This quick and easy, simple orange marmalade sponge pudding can be made for just 25p – and in under 5 minutes – with minimal washing up and using just 5 ingredients!  That hits all the targets, right?  I make a lot of sponge puddings at short notice, sometimes I serve them with custard, sometimes not.

This sponge pudding serves 1-3, depending how you’re feeling – today I’ve just cut about 1/3rd off and I’ll box up the remaining two portions and pop them in the fridge in a microwavable takeaway dish as they can be microwaved hot again in those!

You can make half the quantity by just using half an egg, but if you’ve no need for half an egg then that’s pointless, so I rarely do it.  You can freeze half an egg if you pour it out and freeze it after you’ve beaten it.

This is a great dessert to make with very limited space and equipment.

Sponge Pudding Ingredients:

*I buy the boxes of 10 large eggs at Aldi and the smallest of those will typically weigh about 60 grams (when in the shell), that’s the size you’re after.  The egg weight equals the weight of the other ingredients.

Method:

  1. Weigh out your flour, butter and sugar into a bowl or jug (I use a standard Pyrex jug),  use the dish you’ll cook this in to minimise washing up.  Mix them all together (I use a regular fork) until they’re like breadcrumbs in consistency.
  2. Whisk the egg (I use a tiny pot or mug and a fork) and tip the egg into your dish.  Cream the ingredients together until it’s smooth – I use a fork, this takes about 15-20 seconds.
  3. Add in dollops of orange marmalade and drop those into the wet mix – I use a teaspoon, it’s best if you leave the orange marmalade as small pools rather than mixing it all in, so you get pockets of orange marmalade in the sponge when it’s cooked.
  4. Place your dish into the microwave and microwave (no need for a cover) for 3 minutes on high power (800 watts).
  5. Leave it to sit there for about a minute, run a knife round the outside of the sponge pudding to loosen it from the bowl and tip it out onto a serving plate.  

Serve with a dollop of marmalade, or some custard, or some cream if that’s your thing!

Mug Sponge Puddings:

If you wish, you can pour the microwavable sponge mix into 2-3 mugs and microwave for 2-2½ minutes instead, making individual little puddings.

Can be eaten cold.
